Here's one I've told alot of people about. It doesn't taste much different from regular lasagna. Just substitute the polenta straight across from regular lasagna noodles in ANY of your favorite lasagna recipes. The recipe I've posted is just a suggestion as I usually add whatever I find around the house at the time. Go for it! Be daring and original!! Add some extra sauce and cheese and VOILA! Yummy Gluten free Lasagna.

Ingredients:
1lb cooked ground beef
1 tube prepared polenta (in casing)
1-2 cans spaghetti sauce (to taste)
500g Mozzarella cheese (add other cheeses to taste)
Layer in a rectangular 9X13 pan. The polenta will absorb some of the sauce so it's good to be generous.
Top with extra cheese. Throw in the oven (about 350 deg) for an hour or until cheese is golden brown on top. (You might want to use an actual lasagna recipe...this is typical of how I cook...throwing caution to the wind...haha)
